Recipe: Crockpot Lasagna

lasagnaMaking this Crock Pot Lasagna is similar to making the Crock Pot Enchiladas and just as yummy!

Aldi-easy and kid-approved.

Crock Pot Lasagna

1 pound ground beef or turkey
1 onion, chopped
2-4 carrots, chopped
1-2 cups fresh mushrooms, chopped
1 frozen package of spinach, chopped
Various Italian spices
1 large can of tomato sauce
Lasagna, uncooked
Shredded cheese (Mozzarella, Mexican blend, Colby Jack, or your other favorite cheese)

Brown and drain ground beef or turkey.
Add the onion, carrots, mushrooms, and spinach. Sauté and add various Italian spices as desired.
Place meat and vegetable mixture into large bowl and mix.
Add tomato sauce, a little at a time and mix.  
Place one layer of uncooked lasagna pieces on bottom of crock pot. (You will probably need to break the lasagna to fit the size of your crock pot.)
Place some meat/vegetable mixture on lasagna and a generous amount of cheese on top.
Keep going until you’ve stacked 3 or 4 rows of lasagna and meat/vegetable mixture topped with cheese.

Cook on high for 2 hours and then serve.
Serve with garlic bread. (Aldi’s frozen garlic bread is fantastic.)
You can also easily add more vegetables.
