Eggs-in-a-Mug

This has become my breakfast-of-choice for various reasons…

• Easy and quick to make especially using a work kitchen
• Protein and Veggies!
• We all need a good breakfast and this is one of the easiest to meet that goal
• Warm and delicious

Here’s what you’ll need:

Egg Beaters
Fresh Veggies cut up
Cooking Spray
Mug and Microwave

1. Spray mug with Cooking Spray
2. Throw in veggies – I fill the mug by half
3. Microwave for 1 minute to soften veggies
4. Add Egg Beaters just enough to cover or nearly cover the veggies
5. Microwave for 1 minute until the eggs are not runny
6. Stir well and enjoy!
7. (Sorry for the low-sodium amongst us, but I add salt.)

    yummm…you could also add som low-fat cheese!

    I agree with Barb. I add low fat cheese with my eggs. That is super quick and yummy.

    I’m so with you both that cheese would make it even better… but I’ve pretty much given up all cheese. Even a little. It’s one of those things that I can live without, so it’s easy to cut!
