Recipe: Mashed Cauliflower
I’m still recovering from the fact that my husband loved this dish last night. I didn’t tell them what it was until he had taken several bites. Being on this path to healthy living, I’ve been doing a lot of reading and research about food so I know that potatoes are on the bad side of carbohydrates. And, this isn’t easy for me to acknowledge because they are probably my very first food-love being a meat-and-potatoes type of girl.
Because he liked the Mashed Cauliflower, it’s not too bad that only 1 out of the 3 kids liked them too. Add my thumbs up to the mix for a 3 out of 5 in favor, and I’ll defintly be making these again soon. I encourage you to give them a try – they’re easy and healthy. And it’s a guarantee at least a few in your family will like them.
Mashed Cauliflower
Oven to 400
Cauliflower – fresh or frozen ( I used a 16oz frozen bag)
2 tbsp Low Fat Cream Cheese
½ cup Low Fat Sour Cream
Salt/Pepper to taste
1. Boil the Cauliflower
2. Mash in food processer
3. Add Cream Cheese and Sour Cream
4. Mash again
5. Add Salt/Pepper if desired
6. Bake for about 20 minutes
Notes: The more time you take to mash, the better. And you want the dish to be creamy not runny. Also, I’ve seen other recipes that do not include the Cream Cheese, but I liked the taste it added.


Yes, I’ve made several variations for mashed cauliflower. Usually with just butter and garlic – yum! I’ve also made it half/half caulflower/potatoes, that might help win the other 2 kids over. Potatoes aren’t evil, they still have good nutrition in them. But they are a starch, so we can’t load up on them like cauliflower or broccoli.
